This is a delicious, super easy lamb meatball recipe that you can serve with a yogurt dip for snacking or you can simply add pitta breads or baguettes & some shredded salads for a family treat.

Makes 16 x 1 oz. Meatballs with The Classic Meatball Maker

Prep time 7 minutes – cook time 10 minutes @ 450°F / 230°C

{This recipe can also be made with Chicken or Turkey instead of Lamb}

INGREDIENTS:

Ground Lamb

1 lb

Onion

1 Large [finely chopped]

Garlic Cloves

2 [finely chopped]

Olive Oil

3 Tablespoons

Feta Cheese

½ Cup / 100 grams [flattened & crumbled]

Egg

1 Medium [only use the egg white]

Breadcrumbs

1/3 Cup

Fresh Mint

3 Tablespoons [finely chopped]

Lemon x 1

1 teaspoon lemon zest

All Purpose Seasoning

1 teaspoon

Italian or Mixed Herbs

2 teaspoon

Salt

¾ teaspoon

Black Pepper

¾ teaspoon

Vegetable Oil Spray

 

 

PREPARE:

  1. Heat the olive oil in a frying pan on medium heat.
  2. Add the onion and garlic then reduce the heat only slightly and cook for 3-4 minutes, stirring as you go.
  3. In a mixing bowl put the feta, egg white, breadcrumbs, mint, lemon zest, all-purpose seasoning, herbs, salt & pepper.
  4. Add in the gently cooked onion and garlic and mix well.
  5. From the refrigerator add the ground / minced lamb to the bowl and mix well with all of the ingredients.
  6. Fill your mixture into the main container of the Meatball Xpress. When doing so it is best to fill each chamber of the container one by one, feeding in your food mix with one hand and working it in with the fingers of the other hand up to the MAX line markings on the container.
  7. Once it is filled you can compress your meatballs, clean away any excess and tap out the meatballs into the lid as shown in our TOP TIPS / Demonstration video on our website www.meatballxpress.com.

COOK:

OVEN: Heat the oven [fan assisted] to 450°F 230°C. Line a baking / roasting tray with a sheet of aluminium foil. Spray the foil with vegetable oil and arrange your meatballs in the tray.  Cook for 9-10 minutes and serve with a dip of your choice. A Minted Yogurt Style Dip works really well with this recipe.

MINTED YOGURT DIP RECIPE

Natural Yogurt

x    1 Cup

Fresh Mint

x    2 Tablespoons

Garlic

x    1 Clove [Finely Chopped]

Lemon Juice

x    2 Tablespoons

Salt & Pepper to taste

 

PITTA BREAD / BAGUETTE SERVING SUGGESTIONS

You can prepare any combination of lettuce, shredded carrot & red cabbage, coleslaw, sliced cucumber or red & yellow bell peppers, diced tomato etc. to serve with your pitta breads / baguettes, meatballs and yogurt dip.
